Ingredients:

  • 2 cups (190g) of crispy rice cereal
  • 1 cup (250ml) of mini marshmallows
  • 3 tablespoons (42g) of unsalted butter
  • 1 cup (120g) of assorted gummy candies (e.g., gummy worms, gummy bears)
  • 1 cup (100g) of fruit leather (variety of flavors)
  • 1/2 cup (75g) of decorative sprinkles (optional)

Instructions:

  1. In a medium saucepan, melt butter over low heat. Add mini marshmallows and stir until fully melted and smooth.
  2. Remove from heat and stir in rice cereal until well combined.
  3. Lightly grease hands or use a silicone mat. Press the rice mixture into an even layer, about 1/2 inch thick, on the baking sheet.
  4. Once the rice mixture is cooled enough to handle, cut it into rectangular shapes. Lay a piece of fruit leather onto each rectangle, then place assorted gummy candies in the center.
  5. Carefully roll up the rice mixture, starting from one end, to encase the gummy candies. Use plastic wrap to tighten the roll if needed.
  6. Roll each candy sushi in decorative sprinkles if desired. Cut each roll into bite-sized pieces.
