Ingredients:
- 1 lb boneless, skinless chicken breast, cubed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 18 oz frozen cauliflower gnocchi
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh baby spinach
- 1/2 tsp red pepper flakes
Instructions:
- Pat the chicken cubes dry. Season with salt, pepper, and garlic powder. Heat 1 tbsp of oil over medium-high heat and cook chicken for 3-5 minutes per side until seared. Remove and set aside.
- In the same skillet, add the remaining 1 tbsp of oil and the frozen cauliflower gnocchi. Cook undisturbed for 3-4 minutes, then flip and cook until golden-brown. Remove and set aside with chicken.
- Lower heat to medium. Add minced garlic and red pepper flakes, stirring for 30 seconds. Pour in heavy cream and simmer.
- Stir in Parmesan cheese until thickened and velvety. Fold in baby spinach until wilted.
- Return the chicken and gnocchi to the skillet. Toss for 1-2 minutes until coated and heated through.
