Ingredients:

  • 1 lb boneless, skinless chicken breast, cubed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 18 oz frozen cauliflower gnocchi
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh baby spinach
  • 1/2 tsp red pepper flakes

Instructions:

  1. Pat the chicken cubes dry. Season with salt, pepper, and garlic powder. Heat 1 tbsp of oil over medium-high heat and cook chicken for 3-5 minutes per side until seared. Remove and set aside.
  2. In the same skillet, add the remaining 1 tbsp of oil and the frozen cauliflower gnocchi. Cook undisturbed for 3-4 minutes, then flip and cook until golden-brown. Remove and set aside with chicken.
  3. Lower heat to medium. Add minced garlic and red pepper flakes, stirring for 30 seconds. Pour in heavy cream and simmer.
  4. Stir in Parmesan cheese until thickened and velvety. Fold in baby spinach until wilted.
  5. Return the chicken and gnocchi to the skillet. Toss for 1-2 minutes until coated and heated through.
