Ingredients:

  • 1 box (15-18.25 oz) cake mix (any flavor)
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs

Instructions:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, combine the softened butter, eggs, and cake mix.
  3. Using an electric mixer, mix until just combined. Be careful not to overmix. The dough will be thick.
  4. Drop by rounded tablespoons onto the prepared baking sheets, leaving space between each cookie.
  5. Bake for 8-10 minutes, or until the edges are lightly golden brown. The centers will still appear slightly soft. These are cake mix cookies, so dont overbake!
  6. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
