Ingredients:

  • 2 cups all-purpose flour (240 g)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed (113 g)
  • 1 cup shredded cheese (such as cheddar or a mix) (100 g)
  • 2 tablespoons chopped fresh chives (or green onions)
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika (optional)
  • Freshly cracked black pepper to taste

Instructions:

  1. In a bowl, whisk together the flour, baking powder, and salt.
  2. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until a dough forms; do not overmix.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. While the dough chills, mix together the cheese, chives, garlic powder, paprika, and pepper in a bowl.
  6. On a floured surface, roll out the chilled dough into a rectangle about 1/4 inch thick.
  7. Spread the cheese mixture evenly over the dough, pressing down lightly to adhere.
  8. Roll the dough tightly from one long end to the other and slice into 1-inch (2.5 cm) pieces.
  9. Preheat the oven to 375°F (190°C). Place cheese whirls on a lined baking sheet and bake for 12-15 minutes or until golden brown.
