Ingredients:

  • 1 lb (450g) lean ground beef
  • 1 tbsp (15ml) neutral oil
  • 1/2 medium (75g) yellow onion, finely diced
  • 3 cloves (9g) garlic, minced
  • 1/2 tsp (3g) salt
  • 1/2 tsp (3g) black pepper
  • 1.5 lb (680g) Yukon Gold or Russet potatoes, peeled and cut into 1/2 inch cubes
  • 1 tbsp (15ml) unsalted butter
  • 1/2 tsp (3g) smoked paprika
  • 1/4 cup (60ml) mayonnaise
  • 2 tbsp (30ml) ketchup
  • 1 tbsp (15ml) yellow mustard
  • 1 tbsp (15ml) dill pickle juice
  • 1/2 tsp (3g) garlic powder
  • 1.5 cups (170g) sharp cheddar cheese, shredded
  • 1/4 cup (10g) fresh parsley, chopped

Instructions:

  1. In a small bowl, whisk together the mayonnaise, ketchup, mustard, pickle juice, and garlic powder until velvety and smooth. Set aside in the refrigerator.
  2. Heat the neutral oil in a 12-inch cast iron skillet or large non-stick pan over medium-high heat until shimmering.
  3. Add the ground beef and diced onion to the pan. Cook, breaking the meat apart, until the beef is mahogany-brown and the onions are translucent.
  4. Stir in the minced garlic, salt, and pepper for 60 seconds until fragrant. Use a slotted spoon to transfer the beef to a plate, leaving the rendered fat in the pan.
  5. Add the butter to the beef fat remaining in the pan. Toss in the cubed potatoes and smoked paprika.
  6. Spread the potatoes in a single layer and let them sit undisturbed for 5 minutes to develop a golden crust, then cook until tender.
  7. Return the cooked beef to the skillet and stir to combine with the potatoes.
  8. Top the mixture with shredded cheddar cheese and cover with a lid for 1-2 minutes until the cheese is fully melted.
  9. Garnish with chopped fresh parsley and drizzle with the prepared burger sauce before serving.
