Ingredients:
- 1.5 lbs boneless, skinless chicken breasts, pounded to 1/2 inch thickness
- 1 tbsp extra virgin olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1 cup smoky BBQ sauce
- 6 slices thick-cut bacon, cooked until crisp and chopped
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 tbsp fresh chives, finely sliced
Instructions:
- Preheat your oven to 400°F (204°C). Pound the chicken breasts to a uniform 1/2-inch thickness to ensure even cooking.
- Season the chicken on both sides with smoked paprika, garlic powder, salt, and black pepper.
- Heat olive oil in a large oven-safe skillet (preferably cast iron) over medium-high heat. Sear the chicken for 2-3 minutes per side until golden brown.
- Remove the skillet from heat. Brush each chicken breast generously with the BBQ sauce.
- Top the sauced chicken with the chopped crispy bacon bits and the shredded cheddar and Monterey Jack cheese blend.
- Place the skillet in the oven and bake for 10-12 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the cheese is bubbly and golden.
- Garnish with sliced fresh chives before serving.
