Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts, pounded to 1/2 inch thickness
  • 1 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 cup smoky BBQ sauce
  • 6 slices thick-cut bacon, cooked until crisp and chopped
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp fresh chives, finely sliced

Instructions:

  1. Preheat your oven to 400°F (204°C). Pound the chicken breasts to a uniform 1/2-inch thickness to ensure even cooking.
  2. Season the chicken on both sides with smoked paprika, garlic powder, salt, and black pepper.
  3. Heat olive oil in a large oven-safe skillet (preferably cast iron) over medium-high heat. Sear the chicken for 2-3 minutes per side until golden brown.
  4. Remove the skillet from heat. Brush each chicken breast generously with the BBQ sauce.
  5. Top the sauced chicken with the chopped crispy bacon bits and the shredded cheddar and Monterey Jack cheese blend.
  6. Place the skillet in the oven and bake for 10-12 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the cheese is bubbly and golden.
  7. Garnish with sliced fresh chives before serving.
