Ingredients:
- 8 slices of crusty bread (preferably sourdough) (about 400g)
- 1 tablespoon olive oil (15ml)
- 200g chorizo sausage, diced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup shredded cheddar cheese (100g)
- 1 cup shredded mozzarella cheese (100g)
- 6 large eggs
- 2 cups milk (480ml)
- 1 teaspoon smoked paprika (5g)
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
- 1 cup diced bell peppers (150g)
- 1/2 teaspoon cayenne pepper (2g)
Instructions:
- Cut bread into cubes (about 1-inch pieces).
- Heat olive oil in a skillet over medium heat.
- Add diced chorizo and sauté until browned, about 5-7 minutes.
- Add onion and garlic; cook until softened (about 3-4 minutes).
- In a large bowl, whisk together the eggs, milk, smoked paprika, salt, and pepper.
- Stir in cooked chorizo mixture, bread cubes, and cheese until well combined.
- Transfer mixture to a baking dish. Cover and refrigerate for at least 30 minutes (up to overnight).
- Preheat the oven to 350°F (175°C).
- Remove strata from the fridge and let it sit for 10 minutes.
- Bake uncovered for 40-45 minutes, until golden brown and set in the middle.
- Allow to cool for 5-10 minutes before slicing. Garnish with parsley if desired.
