Ingredients:

  • 8 slices of crusty bread (preferably sourdough) (about 400g)
  • 1 tablespoon olive oil (15ml)
  • 200g chorizo sausage, diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar cheese (100g)
  • 1 cup shredded mozzarella cheese (100g)
  • 6 large eggs
  • 2 cups milk (480ml)
  • 1 teaspoon smoked paprika (5g)
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)
  • 1 cup diced bell peppers (150g)
  • 1/2 teaspoon cayenne pepper (2g)

Instructions:

  1. Cut bread into cubes (about 1-inch pieces).
  2. Heat olive oil in a skillet over medium heat.
  3. Add diced chorizo and sauté until browned, about 5-7 minutes.
  4. Add onion and garlic; cook until softened (about 3-4 minutes).
  5. In a large bowl, whisk together the eggs, milk, smoked paprika, salt, and pepper.
  6. Stir in cooked chorizo mixture, bread cubes, and cheese until well combined.
  7. Transfer mixture to a baking dish. Cover and refrigerate for at least 30 minutes (up to overnight).
  8. Preheat the oven to 350°F (175°C).
  9. Remove strata from the fridge and let it sit for 10 minutes.
  10. Bake uncovered for 40-45 minutes, until golden brown and set in the middle.
  11. Allow to cool for 5-10 minutes before slicing. Garnish with parsley if desired.
