Ingredients:

  • 4 (6oz/170g) boneless, skinless chicken breasts
  • 1 tsp (5g) Kosher salt
  • 1/2 tsp (2g) Freshly cracked black pepper
  • 1 tsp (2g) Onion powder
  • 4 tbsp (56g) Unsalted butter, melted
  • 4 cloves Garlic, minced
  • 1/2 cup (45g) Grated Parmesan cheese
  • 1 tbsp (4g) Fresh parsley, finely chopped
  • 1.5 cups (170g) Shredded whole-milk mozzarella cheese
  • 1/2 tsp (1g) Dried oregano

Instructions:

  1. Preheat your oven to 400°F (200°C). Place the chicken breasts between two sheets of plastic wrap and gently pound them until they are a uniform 1-inch thickness.
  2. Pat the chicken bone-dry with paper towels and season both sides evenly with salt, pepper, and onion powder.
  3. In a small mixing bowl, whisk together the melted butter, minced garlic, grated parmesan cheese, and fresh parsley.
  4. Place the seasoned chicken in a 9x13 inch baking dish. Spread the garlic butter mixture generously over the top of each breast.
  5. Bake in the center rack of the oven for 15 minutes.
  6. Remove the dish from the oven and top each breast with the shredded mozzarella and a sprinkle of dried oregano.
  7. Return to the oven for an additional 5–7 minutes until the mozzarella is bubbling and golden brown. Ensure chicken reaches an internal temperature of 165°F (74°C).
