Ingredients:
- 4 (6oz/170g) boneless, skinless chicken breasts
- 1 tsp (5g) Kosher salt
- 1/2 tsp (2g) Freshly cracked black pepper
- 1 tsp (2g) Onion powder
- 4 tbsp (56g) Unsalted butter, melted
- 4 cloves Garlic, minced
- 1/2 cup (45g) Grated Parmesan cheese
- 1 tbsp (4g) Fresh parsley, finely chopped
- 1.5 cups (170g) Shredded whole-milk mozzarella cheese
- 1/2 tsp (1g) Dried oregano
Instructions:
- Preheat your oven to 400°F (200°C). Place the chicken breasts between two sheets of plastic wrap and gently pound them until they are a uniform 1-inch thickness.
- Pat the chicken bone-dry with paper towels and season both sides evenly with salt, pepper, and onion powder.
- In a small mixing bowl, whisk together the melted butter, minced garlic, grated parmesan cheese, and fresh parsley.
- Place the seasoned chicken in a 9x13 inch baking dish. Spread the garlic butter mixture generously over the top of each breast.
- Bake in the center rack of the oven for 15 minutes.
- Remove the dish from the oven and top each breast with the shredded mozzarella and a sprinkle of dried oregano.
- Return to the oven for an additional 5–7 minutes until the mozzarella is bubbling and golden brown. Ensure chicken reaches an internal temperature of 165°F (74°C).
