Ingredients:

  • 1 lb (450g) potato gnocchi
  • 2 tbsp (30ml) extra virgin olive oil
  • 2 cloves (6g) garlic, minced
  • 3 cups (450g) cooked chicken breast, shredded or cubed
  • 2 cups (480ml) marinara sauce
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 tsp (2g) dried Italian seasoning
  • 1/4 tsp (1g) red pepper flakes
  • 1 1/2 cups (170g) shredded mozzarella cheese
  • 1/4 cup (30g) Panko breadcrumbs
  • 2 tbsp (30g) melted butter

Instructions:

  1. Heat olive oil in the oven safe skillet over medium high heat until shimmering.
  2. Add the gnocchi in a single layer. Cook without stirring for 3-4 minutes until the bottoms are golden brown. Note: Don't crowd the pan or they will steam instead of sear.
  3. Stir and cook for another 3 minutes until the gnocchi look toasted and smell nutty.
  4. Stir in the minced garlic and cook for 30 seconds until fragrant.
  5. Lower the heat to medium. Stir in the shredded chicken, marinara sauce, Italian seasoning, and red pepper flakes.
  6. Mix well, ensuring every piece of gnocchi is coated. Let it simmer for 3-5 minutes until the sauce thickens.
  7. Fold in the grated Parmesan cheese until the sauce becomes velvety.
  8. Preheat your broiler to high.
  9. Evenly sprinkle the shredded mozzarella over the top of the mixture.
  10. In a small bowl, mix melted butter with Panko breadcrumbs; sprinkle this over the cheese.
  11. Place the skillet under the broiler for 3-5 minutes, watching closely, until the cheese bubbles and the crumbs are deep mahogany brown.
  12. Remove from heat and garnish with fresh basil leaves.
