Ingredients:
- 1 lb (450g) potato gnocchi
- 2 tbsp (30ml) extra virgin olive oil
- 2 cloves (6g) garlic, minced
- 3 cups (450g) cooked chicken breast, shredded or cubed
- 2 cups (480ml) marinara sauce
- 1/2 cup (50g) grated Parmesan cheese
- 1 tsp (2g) dried Italian seasoning
- 1/4 tsp (1g) red pepper flakes
- 1 1/2 cups (170g) shredded mozzarella cheese
- 1/4 cup (30g) Panko breadcrumbs
- 2 tbsp (30g) melted butter
Instructions:
- Heat olive oil in the oven safe skillet over medium high heat until shimmering.
- Add the gnocchi in a single layer. Cook without stirring for 3-4 minutes until the bottoms are golden brown. Note: Don't crowd the pan or they will steam instead of sear.
- Stir and cook for another 3 minutes until the gnocchi look toasted and smell nutty.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Lower the heat to medium. Stir in the shredded chicken, marinara sauce, Italian seasoning, and red pepper flakes.
- Mix well, ensuring every piece of gnocchi is coated. Let it simmer for 3-5 minutes until the sauce thickens.
- Fold in the grated Parmesan cheese until the sauce becomes velvety.
- Preheat your broiler to high.
- Evenly sprinkle the shredded mozzarella over the top of the mixture.
- In a small bowl, mix melted butter with Panko breadcrumbs; sprinkle this over the cheese.
- Place the skillet under the broiler for 3-5 minutes, watching closely, until the cheese bubbles and the crumbs are deep mahogany brown.
- Remove from heat and garnish with fresh basil leaves.
