Ingredients:

  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) sea salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1 large (50g) egg, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 1 cup (120g) zucchini, finely grated and squeezed dry
  • 1/2 cup (90g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Grate the zucchini using the smallest holes on a box grater and squeeze out excess moisture using paper towels or a clean cloth.
  3. In a large mixing bowl, whisk together melted butter and granulated sugar until smooth.
  4. Beat in the egg and vanilla extract until the mixture is glossy.
  5. Sift in the all-purpose flour, cocoa powder, baking soda, and sea salt. Stir with a spatula until just combined; do not overmix.
  6. Gently fold in the squeezed grated zucchini and semi-sweet chocolate chips until evenly distributed.
  7. Spread the batter into the prepared pan and bake for 22–25 minutes, or until edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
