Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) brown sugar, packed
- 1 tbsp (8g) ground cinnamon
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (120ml) unsweetened applesauce
- 1/2 cup (120ml) whole milk
- 1/2 cup (115g) melted unsalted butter
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (225g) peeled and finely diced Granny Smith apples
- 1/2 cup (65g) all-purpose flour
- 1/4 cup (50g) brown sugar
- 1 tsp (2g) ground cinnamon
- 3 tbsp (42g) cold unsalted butter, cubed
Instructions:
- Preheat oven to 425°F (218°C) and line a standard 12 cup muffin tin with paper liners. Note: The high heat is what creates the height.
- In a large bowl, whisk together the flour, brown sugar, cinnamon, baking powder, and salt.
- In a separate small bowl, whisk together the melted butter, milk, applesauce, egg, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Stop when a few lumps remain to avoid a rubbery texture.
- Gently fold in the diced apples using a spatula. Note: Don't over stir or the apples will smash.
- Divide the batter evenly among the 12 muffin cups. Top each with a generous pinch of the crumbled streusel mixture.
- Bake at 425°F (218°C) for 5 minutes. Do not open the oven door during this time.
- Reduce heat to 350°F (175°C) immediately. Bake for an additional 15–18 minutes until a toothpick inserted in the center comes out clean.
