Ingredients:
- 100g granulated sugar
- 15g ground cinnamon
- 2g ground nutmeg
- 375g all-purpose flour
- 200g granulated sugar
- 5g baking soda
- 5g baking powder
- 3g fine sea salt
- 240ml full-fat Greek yogurt
- 120ml melted unsalted butter
- 2 large eggs
- 10ml pure vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
- In a small bowl, whisk together 100g sugar, 15g cinnamon, and 2g nutmeg until uniform to create the cinnamon sugar ripple.
- In a large mixing bowl, whisk together the flour, 200g sugar, baking soda, baking powder, and sea salt.
- In a separate jug or bowl, whisk together the Greek yogurt, melted butter, eggs, and vanilla extract until smooth.
- Make a well in the center of the dry ingredients and pour in the wet mixture. Fold gently with a silicone spatula until just combined, being careful not to over-mix.
- Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture evenly over the batter.
- Pour the remaining batter over the cinnamon layer, then top with the remaining cinnamon-sugar. Use a knife to lightly swirl the layers if desired.
- Bake for 50 minutes or until a skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes before lifting out using the parchment sling.
