Ingredients:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 teaspoon Dijon mustard (optional)
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon paprika (optional)
  • 1 1/2 cups sharp cheddar cheese, shredded
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan over medium heat, melt the butter.
  2. Add flour to butter, whisking continuously for about 1-2 minutes until light golden in colour, forming a roux.
  3. Gradually pour in the milk, whisking to prevent lumps. Cook until the mixture thickens, about 3-4 minutes.
  4. Mix in Dijon mustard, garlic powder, and paprika, if using.
  5. Lower the heat and add the shredded cheddar cheese gradually, stirring until melted and smooth (about 3-4 minutes).
  6. Season with salt and pepper to taste, stirring well.
