Ingredients:
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 teaspoon Dijon mustard (optional)
- 1/2 teaspoon garlic powder (optional)
- 1/4 teaspoon paprika (optional)
- 1 1/2 cups sharp cheddar cheese, shredded
- Salt and pepper to taste
Instructions:
- In a medium saucepan over medium heat, melt the butter.
- Add flour to butter, whisking continuously for about 1-2 minutes until light golden in colour, forming a roux.
- Gradually pour in the milk, whisking to prevent lumps. Cook until the mixture thickens, about 3-4 minutes.
- Mix in Dijon mustard, garlic powder, and paprika, if using.
- Lower the heat and add the shredded cheddar cheese gradually, stirring until melted and smooth (about 3-4 minutes).
- Season with salt and pepper to taste, stirring well.
