Ingredients:
- 2 cups (250g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup (227g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1/4 cup (50g) powdered sugar
- 1 large (50g) egg
- 1 teaspoon vanilla extract
- 1/4 cup (60g) dark chocolate chips or melting chocolate
- Optional: Edible gold dust for a touch of glamour
Instructions:
- Whisk together flour, baking powder, and salt in a bowl.
- In another bowl, cream the softened butter, granulated sugar, and powdered sugar until light and fluffy.
- Beat in the egg and vanilla until well combined.
- Gradually mix in the dry ingredients until a soft dough forms.
- Divide the dough in half, shape into disks, and wrap in plastic wrap. Chill in the refrigerator for about 30 minutes.
- Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface to about 1/4 inch thick.
- Use chess-themed cookie cutters to cut shapes from the dough and place cookies on parchment-lined baking sheets.
- Bake for 12-15 minutes or until edges are lightly golden, then cool on sheets for a few minutes before transferring to a cooling rack.
- Melt chocolate and drizzle over cooled cookies, adding edible gold dust if desired. Allow to set before serving.
