  • 1/4 teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) powdered sugar
  • 1 large (50g) egg
  • 1 teaspoon vanilla extract
  • 1/4 cup (60g) dark chocolate chips or melting chocolate
  • Optional: Edible gold dust for a touch of glamour

Instructions:

  1. Whisk together flour, baking powder, and salt in a bowl.
  2. In another bowl, cream the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Beat in the egg and vanilla until well combined.
  4. Gradually mix in the dry ingredients until a soft dough forms.
  5. Divide the dough in half, shape into disks, and wrap in plastic wrap. Chill in the refrigerator for about 30 minutes.
  6. Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface to about 1/4 inch thick.
  7. Use chess-themed cookie cutters to cut shapes from the dough and place cookies on parchment-lined baking sheets.
  8. Bake for 12-15 minutes or until edges are lightly golden, then cool on sheets for a few minutes before transferring to a cooling rack.
  9. Melt chocolate and drizzle over cooled cookies, adding edible gold dust if desired. Allow to set before serving.
