Ingredients:

  • 8 oz (225 g) lo mein noodles (fresh or dried)
  • 1 lb (450 g) chicken breast, sliced into thin strips
  • 1 cup (100 g) snow peas, trimmed
  • 1 bell pepper, sliced (red or green)
  • 2 cups (150 g) broccoli florets
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 2 tbsp (30 ml) vegetable oil (for frying)
  • 3 tbsp (45 ml) soy sauce (use low-sodium if preferred)
  • 1 tbsp (15 ml) oyster sauce
  • 1 tsp (5 ml) sesame oil
  • 1 tsp (5 g) sugar
  • 1/4 tsp (1 g) black pepper

Instructions:

  1. Boil water in a large pot, add lo mein noodles, and cook according to package instructions. Drain and set aside.
  2. In a mixing bowl, combine soy sauce, oyster sauce, sesame oil, sugar, and black pepper. Set aside.
  3. Heat vegetable oil in a wok over medium-high heat. Add sliced chicken strips, cooking until browned and cooked through (about 5-7 minutes). Remove and set aside.
  4. In the same wok, add garlic, snow peas, bell pepper, and broccoli. Stir-fry for 3-5 minutes until tender-crisp.
  5. Return the cooked chicken to the wok, add the noodles, and pour the sauce over. Toss everything together, cooking for an additional 2-3 minutes until heated through and well combined.
  6. Transfer to serving plates, garnishing with sliced green onions.
