Ingredients:

  • 4 medium cucumbers (about 1 pound or 450g)
  • 2 cups distilled white vinegar
  • 2 cups water
  • ¼ cup granulated sugar
  • 3 tablespoons kosher salt
  • 4 cloves garlic
  • 2 tablespoons whole dill seeds
  • 1 teaspoon black peppercorns
  • ½ teaspoon red chili flakes

Instructions:

  1. Wash and cut the cucumbers into preferred shape (spears, rounds, or leave whole).
  2. In a medium bowl, whisk together vinegar, water, sugar, and salt until dissolved to make the brine.
  3. Place garlic, dill seeds, black peppercorns, and chili flakes at the bottom of your jar.
  4. Pack the cucumbers into the jar, leaving some space at the top.
  5. Pour the brine over the cucumbers until fully submerged.
  6. Seal the jar tightly and refrigerate for at least 24 hours to develop flavor.
  7. Taste and enjoy your homemade pickles after chilling.
