Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1 ½ cups whole milk
  • 1 tablespoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • Vegetable oil (for frying, approximately 4 cups)
  • Powdered sugar (for dusting)
  • Optional toppings: chocolate sauce, strawberries, or whipped cream

Instructions:

  1. In a bowl, whisk together flour, sugar, baking powder, salt, and cinnamon (if using).
  2. In another bowl, whisk eggs, milk, and vanilla extract until smooth.
  3. Gradually stir wet mixture into dry until just combined (some lumps are okay) and let the batter rest for 30 minutes.
  4. In a deep frying pan, heat vegetable oil to 350°F (175°C).
  5. Carefully squeeze or drizzle batter in a circular motion into the oil, overlapping as you go. Fry until golden brown, about 2-3 minutes per side.
  6. Remove the funnel cake with a slotted spoon and drain on paper towels. Dust generously with powdered sugar and serve with toppings of choice.
