Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 large eggs
- 1 ½ cups whole milk
- 1 tablespoon vanilla extract
- ½ teaspoon ground cinnamon (optional)
- Vegetable oil (for frying, approximately 4 cups)
- Powdered sugar (for dusting)
- Optional toppings: chocolate sauce, strawberries, or whipped cream
Instructions:
- In a bowl, whisk together flour, sugar, baking powder, salt, and cinnamon (if using).
- In another bowl, whisk eggs, milk, and vanilla extract until smooth.
- Gradually stir wet mixture into dry until just combined (some lumps are okay) and let the batter rest for 30 minutes.
- In a deep frying pan, heat vegetable oil to 350°F (175°C).
- Carefully squeeze or drizzle batter in a circular motion into the oil, overlapping as you go. Fry until golden brown, about 2-3 minutes per side.
- Remove the funnel cake with a slotted spoon and drain on paper towels. Dust generously with powdered sugar and serve with toppings of choice.
