Ingredients:

  • 2 pounds of potatoes (Yukon Gold or Maris Piper)
  • 1 cup of kale, finely chopped (or green cabbage)
  • ½ cup of whole milk
  • 4 tablespoons of unsalted butter, plus extra for serving
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • A pinch of nutmeg (optional)
  • Chopped scallions or green onions (optional)

Instructions:

  1. Peel and chop potatoes into even chunks. Place in a large pot of cold salted water.
  2. Bring to a boil, then simmer until fork-tender (around 15-20 minutes).
  3. In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped kale (or cabbage), a pinch of salt, and sauté until wilted (about 5-7 minutes).
  4. Drain the potatoes in a colander and return to the pot. Add the remaining butter and milk; mash until smooth.
  5. Fold the sautéed greens into the mashed potatoes. Season with nutmeg, salt, and black pepper to taste.
  6. Transfer to a serving bowl, make a small well in the center, and add a pat of butter.
