Ingredients:
- 1 cup (160 g) blanched almonds, finely ground
- 1 cup (200 g) granulated sugar
- 1 cup (240 ml) water, plus additional for soaking
- 1 teaspoon (5 ml) pure almond extract
- 1/4 teaspoon (1 g) orange flower water (optional)
Instructions:
- Soak the blanched almonds in a bowl covered with water for at least 30 minutes.
- Drain the almonds, blend them with 1 cup of water until smooth.
- Strain the almond mixture through a fine mesh strainer into a saucepan, squeezing out as much liquid as possible.
- Add sugar to the almond liquid in the saucepan and heat over medium heat, stirring until the sugar dissolves. Do not bring to a boil.
- Remove from heat and stir in the almond extract and optional orange flower water.
- Allow the syrup to cool completely before transferring it to an airtight container.
