Ingredients:

  • 1 cup (160 g) blanched almonds, finely ground
  • 1 cup (200 g) granulated sugar
  • 1 cup (240 ml) water, plus additional for soaking
  • 1 teaspoon (5 ml) pure almond extract
  • 1/4 teaspoon (1 g) orange flower water (optional)

Instructions:

  1. Soak the blanched almonds in a bowl covered with water for at least 30 minutes.
  2. Drain the almonds, blend them with 1 cup of water until smooth.
  3. Strain the almond mixture through a fine mesh strainer into a saucepan, squeezing out as much liquid as possible.
  4. Add sugar to the almond liquid in the saucepan and heat over medium heat, stirring until the sugar dissolves. Do not bring to a boil.
  5. Remove from heat and stir in the almond extract and optional orange flower water.
  6. Allow the syrup to cool completely before transferring it to an airtight container.
