Ingredients:

  • 1 lb linguine
  • 1 tbsp salt
  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp toasted sesame oil
  • 1/2 cup reserved pasta water
  • 2 stalks green onions, thinly sliced
  • 1 tsp toasted sesame seeds
  • 1/2 tsp red chili flakes

Instructions:

  1. Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente. Reserve 1/2 cup of the starchy pasta water before draining the noodles.
  2. Place a skillet over medium heat and melt the butter until it begins to foam. Add the minced garlic and sauté for 30 seconds until fragrant.
  3. Whisk together the oyster sauce, soy sauce, brown sugar, and sesame oil in a small bowl. Pour the mixture into the skillet and stir constantly for 1 minute until the sauce bubbles and thickens into a glossy syrup.
  4. Toss the cooked pasta into the skillet and pour in the reserved pasta water. Vigorously toss the noodles over medium-high heat for 2 minutes until the sauce becomes a velvety glaze.
  5. Divide the pasta into bowls and garnish with sliced green onions, toasted sesame seeds, and red chili flakes.
