Ingredients:

  • 2 large ripe tomatoes, diced
  • 1 small red onion, finely chopped
  • 1 fresh jalapeño pepper, seeds removed and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 teaspoon ground cumin (optional)

Instructions:

  1. Dice the tomatoes and place them in a mixing bowl.
  2. Finely chop the red onion and add to the tomatoes.
  3. Mince the jalapeño pepper and incorporate into the bowl.
  4. Chop the cilantro and add it to the mixture.
  5. Squeeze the juice of one lime over the mixture.
  6. Season with salt and pepper to taste; add ground cumin if desired.
  7. Gently stir all ingredients together until well combined.
  8. Taste the salsa and adjust seasoning as needed.
  9. Serve immediately or cover and refrigerate for 30 minutes.
