Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened (226g)
  • 1/4 teaspoon sea salt (1g) (optional)
  • Optional Sweet: 2 tablespoons honey (42g), 1/2 teaspoon ground cinnamon (1g), pinch of nutmeg
  • Optional Savory: 2 cloves garlic, minced (6g), 2 tablespoons finely chopped fresh herbs (e.g., parsley, chives, thyme) (6g), 1/4 teaspoon black pepper (1g)
  • Optional Spicy: 1/2 teaspoon chili flakes (1g), 1 tablespoon honey (21g)

Instructions:

  1. Allow the butter to sit at room temperature for 1-2 hours until very soft but not melted. It should be easily dented with your finger.
  2. Place the softened butter and salt (if using) in the bowl of a stand mixer fitted with the whisk attachment (or use a hand mixer). Beat on medium speed for 3-5 minutes, or until the butter is light and fluffy.
  3. If adding flavourings, add them now. Continue to whip on low speed for another minute, until the ingredients are fully incorporated.
  4. Transfer the whipped butter to an airtight container. While not strictly necessary, chilling for 30 minutes can help the flavors meld.
  5. Serve immediately or store in the refrigerator. Bring to room temperature slightly before serving for the best texture.
