  • 1 cup whole milk (240ml)
  • 1 cup grated sharp cheddar cheese (100g)
  • ½ cup crumbled feta cheese (75g)
  • ¼ cup fresh chopped herbs (such as chives, parsley, and thyme) (15g)
  • Salt and freshly ground black pepper, to taste
  • 8 slices of crusty bread (such as sourdough or French bread)
  • 2 tablespoons unsalted butter (30g) for cooking

Instructions:

  1. In a shallow dish, whisk together eggs, milk, cheddar, feta, chopped herbs, salt, and pepper until well combined.
  2. Arrange slices of bread in the dish, allowing them to soak for about 30 minutes, turning occasionally to ensure even absorption.
  3. Heat a non-stick skillet or griddle over medium heat; add butter and melt until foamy but not browned.
  4. Carefully place soaked bread slices into the skillet. Cook for about 4-5 minutes on each side until golden brown and crispy.
  5. Serve warm, garnished with fresh herbs and a dash of hot sauce, if desired.
