- 1 cup grated sharp cheddar cheese (100g)
- ½ cup crumbled feta cheese (75g)

- Salt and freshly ground black pepper, to taste
- 8 slices of crusty bread (such as sourdough or French bread)
- 2 tablespoons unsalted butter (30g) for cooking
Instructions:
- In a shallow dish, whisk together eggs, milk, cheddar, feta, chopped herbs, salt, and pepper until well combined.
- Arrange slices of bread in the dish, allowing them to soak for about 30 minutes, turning occasionally to ensure even absorption.
- Heat a non-stick skillet or griddle over medium heat; add butter and melt until foamy but not browned.
- Carefully place soaked bread slices into the skillet. Cook for about 4-5 minutes on each side until golden brown and crispy.
- Serve warm, garnished with fresh herbs and a dash of hot sauce, if desired.
