Ingredients:

  • 1 cup (112g) Almond Flour, blanched
  • 4 ounces (113g) Cottage Cheese, full-fat or low-fat
  • 1 large Egg
  • 1 teaspoon Baking Powder
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ¼ teaspoon Sea Salt
  • 1 Egg, beaten (optional)
  • Everything Bagel Seasoning (or sesame seeds, poppy seeds, etc.) (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together almond flour, baking powder, garlic powder, onion powder, and salt.
  3. Add cottage cheese and egg to the dry ingredients. Mix well until a thick dough forms.
  4. Divide the dough into 6 equal portions. Roll each portion into a log and then connect the ends to form a bagel shape. Place the bagels on the prepared baking sheet.
  5. Brush the tops of the bagels with the beaten egg (optional). Sprinkle with your chosen toppings (optional).
  6. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  7. Let the bagels cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
