Ingredients:

  • 2 slices (112g) sourdough bread
  • 1 tbsp (14g) unsalted butter
  • 1/2 cup (115g) low-fat cottage cheese
  • 1/2 medium (85g) ripe avocado
  • 1 tsp (5ml) fresh lemon juice
  • 1/4 tsp (1.5g) sea salt
  • 1/4 tsp (1.5g) cracked black pepper
  • 1 tbsp (5g) Everything Bagel seasoning
  • 1 large egg
  • 1 tsp (5ml) olive oil

Instructions:

  1. Toast sourdough bread slices until deep golden brown. For best results, use a skillet with a small pat of butter to create a uniform crust.
  2. In a small bowl, mash the avocado with lemon juice, sea salt, and cracked black pepper until mostly smooth.
  3. Fold in the cottage cheese. For a smoother consistency, pulse the avocado mixture and cottage cheese in a food processor for 30 seconds.
  4. Spread a thick, even layer of the cottage cheese and avocado mixture across the warm toast immediately after toasting.
  5. Sprinkle Everything Bagel seasoning evenly across the top.
  6. Optional: Fry one large egg sunny-side up in olive oil for 3 minutes and slide it gently onto the avocado layer.
