Ingredients:
- 2 slices (112g) sourdough bread
- 1 tbsp (14g) unsalted butter
- 1/2 cup (115g) low-fat cottage cheese
- 1/2 medium (85g) ripe avocado
- 1 tsp (5ml) fresh lemon juice
- 1/4 tsp (1.5g) sea salt
- 1/4 tsp (1.5g) cracked black pepper
- 1 tbsp (5g) Everything Bagel seasoning
- 1 large egg
- 1 tsp (5ml) olive oil
Instructions:
- Toast sourdough bread slices until deep golden brown. For best results, use a skillet with a small pat of butter to create a uniform crust.
- In a small bowl, mash the avocado with lemon juice, sea salt, and cracked black pepper until mostly smooth.
- Fold in the cottage cheese. For a smoother consistency, pulse the avocado mixture and cottage cheese in a food processor for 30 seconds.
- Spread a thick, even layer of the cottage cheese and avocado mixture across the warm toast immediately after toasting.
- Sprinkle Everything Bagel seasoning evenly across the top.
- Optional: Fry one large egg sunny-side up in olive oil for 3 minutes and slide it gently onto the avocado layer.
