Ingredients:
- 5 oz (142g) Boneless, skinless chicken breast
- 1 tbsp (15ml) Olive oil
- 2 tbsp (30ml) BBQ Sauce
- 1/4 tsp Garlic powder
- 1/4 tsp Onion powder
- Salt and pepper to taste
- 1 cup (225g) Low-fat cottage cheese
- 1/4 cup (approx. 40g) Shredded cheddar cheese (optional)
- 1/4 cup (approx. 30g) Corn kernels
- 1/4 cup (approx. 30g) Black beans
- 1/4 cup (approx. 30g) Diced red onion
- 1/4 cup (approx. 30g) Diced bell pepper
- 1 tbsp Fresh cilantro, chopped (optional)
- Hot sauce, to taste (optional)
Instructions:
- Season chicken breast with garlic powder, onion powder, salt, and pepper. Heat olive oil in a medium skillet over medium heat. Cook chicken until cooked through (internal temperature reaches 165°F / 74°C), about 6-8 minutes per side.
- Remove chicken from skillet and let rest for a few minutes. Slice or shred the chicken. Return to the skillet and toss with BBQ sauce until evenly coated.
- Spoon cottage cheese into a bowl. Top with BBQ chicken, cheddar cheese (if using), corn, black beans, red onion, and bell pepper.
- Garnish with fresh cilantro (if using) and a drizzle of hot sauce (if desired). Serve immediately.
