Ingredients:
- 4 large egg whites
- 2 tablespoons cream of tartar
- 3 ounces full-fat cottage cheese
- 1/4 teaspoon sea salt
- 1 tablespoon fresh chives, finely chopped (optional)
Instructions:
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a large bowl, beat egg whites with cream of tartar and salt using an electric mixer until stiff, glossy peaks form.
- In a separate small bowl, blend cottage cheese until smooth.
- Gently fold the cottage cheese into the whipped egg whites until just combined. Be careful not to deflate the egg whites. Add chives if desired.
- Drop spoonfuls of the mixture onto the prepared baking sheet, creating 6 round breads.
- Bake for 25-30 minutes, or until golden brown and set. They should spring back lightly when touched.
- Let cool completely on the baking sheet before serving.
