Ingredients:

  • 4 large egg whites
  • 2 tablespoons cream of tartar
  • 3 ounces full-fat cottage cheese
  • 1/4 teaspoon sea salt
  • 1 tablespoon fresh chives, finely chopped (optional)

Instructions:

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, beat egg whites with cream of tartar and salt using an electric mixer until stiff, glossy peaks form.
  3. In a separate small bowl, blend cottage cheese until smooth.
  4. Gently fold the cottage cheese into the whipped egg whites until just combined. Be careful not to deflate the egg whites. Add chives if desired.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet, creating 6 round breads.
  6. Bake for 25-30 minutes, or until golden brown and set. They should spring back lightly when touched.
  7. Let cool completely on the baking sheet before serving.
