Ingredients:

  • 2 tablespoons (30 ml) cottage cheese (full-fat or low-fat)
  • 1 large egg
  • 1 tablespoon (15 ml) granulated sugar (or sweetener of choice)
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons (16g) all-purpose flour (or gluten-free blend)
  • 1/4 teaspoon baking powder
  • Pinch of salt

Instructions:

  1. In the mug, thoroughly mix the cottage cheese, egg, sugar, and vanilla extract with a fork or small whisk until smooth. Make sure there are no large lumps of cottage cheese.
  2. Add the flour, baking powder, and salt to the mug. Stir until just combined. Be careful not to overmix. A few small lumps are fine.
  3. Microwave on high power for 1-2 minutes. Start with 1 minute and check. Continue microwaving in 15-second intervals until the cake is cooked through. The cake should be slightly puffed up and the top should look mostly set, but not dry.
  4. Let the mug cake cool for a minute or two before serving. This allows it to firm up slightly.
  5. Top with your favourite toppings and enjoy!
