Ingredients:
- 2 tablespoons (30 ml) cottage cheese (full-fat or low-fat)
- 1 large egg
- 1 tablespoon (15 ml) granulated sugar (or sweetener of choice)
- 1/2 teaspoon vanilla extract
- 2 tablespoons (16g) all-purpose flour (or gluten-free blend)
- 1/4 teaspoon baking powder
- Pinch of salt
Instructions:
- In the mug, thoroughly mix the cottage cheese, egg, sugar, and vanilla extract with a fork or small whisk until smooth. Make sure there are no large lumps of cottage cheese.
- Add the flour, baking powder, and salt to the mug. Stir until just combined. Be careful not to overmix. A few small lumps are fine.
- Microwave on high power for 1-2 minutes. Start with 1 minute and check. Continue microwaving in 15-second intervals until the cake is cooked through. The cake should be slightly puffed up and the top should look mostly set, but not dry.
- Let the mug cake cool for a minute or two before serving. This allows it to firm up slightly.
- Top with your favourite toppings and enjoy!
