Ingredients:
- 250g Ground Beef
- 1 tbsp Olive Oil
- 1 packet Taco Seasoning
- 1/4 cup Water
- 500g Full-Fat Cottage Cheese
- 1 cup Shredded Cheddar Cheese
- 1 medium Tomato, diced
- 1/2 Green Bell Pepper, diced
- 1/4 cup Red Onion, diced
- 1/2 cup Corn Kernels
- 1/4 cup Salsa
- 2 tbsp Sour Cream
- Optional: Chopped Cilantro
- Optional: Jalapeño slices
Instructions:
- Heat olive oil in a skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Stir in taco seasoning and water. Simmer for 5 minutes, or until the liquid is absorbed and the beef is nicely coated.
- Divide cottage cheese evenly between two bowls.
- Top each bowl with seasoned ground beef, shredded cheese, diced tomato, green bell pepper, red onion, corn, and salsa.
- Add a dollop of sour cream to each bowl. Garnish with chopped cilantro and jalapeño slices (if desired). Serve immediately.
