Ingredients:

  • 250g Ground Beef
  • 1 tbsp Olive Oil
  • 1 packet Taco Seasoning
  • 1/4 cup Water
  • 500g Full-Fat Cottage Cheese
  • 1 cup Shredded Cheddar Cheese
  • 1 medium Tomato, diced
  • 1/2 Green Bell Pepper, diced
  • 1/4 cup Red Onion, diced
  • 1/2 cup Corn Kernels
  • 1/4 cup Salsa
  • 2 tbsp Sour Cream
  • Optional: Chopped Cilantro
  • Optional: Jalapeño slices

Instructions:

  1. Heat olive oil in a skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Stir in taco seasoning and water. Simmer for 5 minutes, or until the liquid is absorbed and the beef is nicely coated.
  3. Divide cottage cheese evenly between two bowls.
  4. Top each bowl with seasoned ground beef, shredded cheese, diced tomato, green bell pepper, red onion, corn, and salsa.
  5. Add a dollop of sour cream to each bowl. Garnish with chopped cilantro and jalapeño slices (if desired). Serve immediately.
