Ingredients:

  • 1 cup (225g) Large Curd Cottage Cheese (4% milk fat)
  • 1/4 tsp Pure Vanilla Extract
  • 1/2 cup (75g) Fresh Berries (blueberries, raspberries, or sliced strawberries)
  • 1 tsp (7ml) Raw Honey or Maple Syrup
  • 1/2 tsp Fresh Lemon Zest
  • 2 tbsp (15g) Toasted Almonds
  • 1 tsp (5g) Chia Seeds

Instructions:

  1. Toast the almonds. Place 2 tbsp (15g) toasted almonds in a dry pan over medium heat for 3 minutes until fragrant and golden brown.
  2. Prep the citrus. Grate 1/2 tsp fresh lemon zest using a microplane.
  3. Scoop the base. Place 1 cup (225g) large curd cottage cheese into your serving bowl.
  4. Infuse the flavor. Stir 1/4 tsp pure vanilla extract and the lemon zest into the cheese until streaks are gone.
  5. Wash the fruit. Rinse 1/2 cup (75g) fresh berries and pat them dry with a paper towel.
  6. Macerate slightly. Toss the berries with 1 tsp (7ml) raw honey in a separate small dish until glossy.
  7. Add the crunch. Sprinkle 1 tsp (5g) chia seeds over the top of the cottage cheese base.
  8. Combine. Layer the honey coated berries over the cottage cheese.
  9. Final garnish. Top with the warm toasted almonds just before serving.
