Ingredients:
- 2 lbs (900g) ground beef (80/20 blend recommended)
- 1 cup (120g) crushed saltine crackers, finely crushed (about 30 crackers)
- 1 cup (240ml) milk (whole milk or 2% preferred)
- 1 medium yellow onion, finely chopped (approximately ½ cup / 75g)
- 1 large egg, lightly beaten
- 2 tablespoons (30ml) Worcestershire sauce
- 1 teaspoon (5ml) dried thyme
- 1 teaspoon (5ml) salt
- ½ teaspoon (2.5ml) black pepper
- ½ cup (120ml) ketchup
- 2 tablespoons (30ml) brown sugar, packed
- 1 tablespoon (15ml) yellow mustard
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, combine crushed crackers and milk. Let sit for 10 minutes to soften the crackers.
- Add ground beef, onion, egg, Worcestershire sauce, thyme, salt, and pepper to the cracker mixture.
- Gently combine all ingredients with your hands until just mixed. Be careful not to overmix, which can result in a tough meatloaf.
- Shape the mixture into a loaf and place it in the loaf pan.
- In a small bowl, whisk together ketchup, brown sugar, and mustard.
- Spread the glaze evenly over the top of the meatloaf.
- Bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing and serving. This helps the juices redistribute.
