Ingredients:

  • 2 lbs (900g) ground beef (80/20 blend recommended)
  • 1 cup (120g) crushed saltine crackers, finely crushed (about 30 crackers)
  • 1 cup (240ml) milk (whole milk or 2% preferred)
  • 1 medium yellow onion, finely chopped (approximately ½ cup / 75g)
  • 1 large egg, lightly beaten
  • 2 tablespoons (30ml) Worcestershire sauce
  • 1 teaspoon (5ml) dried thyme
  • 1 teaspoon (5ml) salt
  • ½ teaspoon (2.5ml) black pepper
  • ½ cup (120ml) ketchup
  • 2 tablespoons (30ml) brown sugar, packed
  • 1 tablespoon (15ml) yellow mustard

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine crushed crackers and milk. Let sit for 10 minutes to soften the crackers.
  3. Add ground beef, onion, egg, Worcestershire sauce, thyme, salt, and pepper to the cracker mixture.
  4. Gently combine all ingredients with your hands until just mixed. Be careful not to overmix, which can result in a tough meatloaf.
  5. Shape the mixture into a loaf and place it in the loaf pan.
  6. In a small bowl, whisk together ketchup, brown sugar, and mustard.
  7. Spread the glaze evenly over the top of the meatloaf.
  8. Bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C).
  9. Let the meatloaf rest for 10 minutes before slicing and serving. This helps the juices redistribute.
