Ingredients:
- 2 cups cooked chicken, shredded
- 1 cup fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
- 2 cups marinara sauce
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 12 manicotti shells
Instructions:
- Preheat the oven to 375°F (190°C).
- Boil water in a large pot, salt it generously, and cook the manicotti shells according to package instructions until al dente. Drain and set aside.
- In a bowl, mix together the shredded chicken, chopped spinach, ricotta, mozzarella, Parmesan, egg, garlic powder, salt, and pepper until well-combined.
- Using a spoon, carefully fill each manicotti shell with the chicken and spinach mixture.
- In a saucepan, heat olive oil. Add marinara sauce and Italian seasoning. Simmer for a few minutes.
- Spread a thin layer of the marinara sauce on the bottom of the baking dish. Place the filled manicotti shells over the sauce, then cover with remaining marinara sauce.
- Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until bubbly.
- Let the dish cool for a few minutes before serving. Enjoy!
