Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 cup fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 12 manicotti shells

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Boil water in a large pot, salt it generously, and cook the manicotti shells according to package instructions until al dente. Drain and set aside.
  3. In a bowl, mix together the shredded chicken, chopped spinach, ricotta, mozzarella, Parmesan, egg, garlic powder, salt, and pepper until well-combined.
  4. Using a spoon, carefully fill each manicotti shell with the chicken and spinach mixture.
  5. In a saucepan, heat olive oil. Add marinara sauce and Italian seasoning. Simmer for a few minutes.
  6. Spread a thin layer of the marinara sauce on the bottom of the baking dish. Place the filled manicotti shells over the sauce, then cover with remaining marinara sauce.
  7. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until bubbly.
  8. Let the dish cool for a few minutes before serving. Enjoy!
