Ingredients:
- 1 lb (450g) mixed frozen seafood (shrimp, scallops, cod), thawed and drained
- 1 tbsp (15ml) olive oil
- 1/2 cup (50g) chopped yellow onion
- 2 cloves garlic, minced
- 1/4 cup (30g) all-purpose flour
- 2 cups (475ml) milk
- 1/2 cup (120ml) dry white wine (optional, chicken broth can be substituted)
- 4 oz (115g) cream cheese, softened
- 1 tsp Old Bay seasoning
- 1/4 tsp black pepper
- 1/4 cup (20g) chopped fresh parsley
- 1 cup (100g) shredded cheddar cheese
- 1 cup (80g) crushed Ritz crackers
- 2 tbsp (30g) unsalted butter, melted
Instructions:
- Preheat oven to 350°F (175°C). Lightly grease the baking dish.
- Sauté onion in olive oil until softened. Add garlic and cook until fragrant (about 30 seconds).
- Sprinkle flour over the onions and garlic. Cook for 1 minute, stirring constantly.
- Gradually whisk in milk and wine (or broth) until smooth.
- Stir in cream cheese until melted and smooth. Add Old Bay seasoning, pepper, and parsley.
- Gently fold in the thawed and drained seafood.
- Pour the seafood mixture into the prepared baking dish. Top with cheddar cheese.
- Combine crushed crackers and melted butter in a bowl.
- Sprinkle the cracker mixture evenly over the cheese.
- Bake for 30 minutes, or until golden brown and bubbly. Let stand for 5-10 minutes before serving.
