Ingredients:

  • 1 lb (450g) mixed frozen seafood (shrimp, scallops, cod), thawed and drained
  • 1 tbsp (15ml) olive oil
  • 1/2 cup (50g) chopped yellow onion
  • 2 cloves garlic, minced
  • 1/4 cup (30g) all-purpose flour
  • 2 cups (475ml) milk
  • 1/2 cup (120ml) dry white wine (optional, chicken broth can be substituted)
  • 4 oz (115g) cream cheese, softened
  • 1 tsp Old Bay seasoning
  • 1/4 tsp black pepper
  • 1/4 cup (20g) chopped fresh parsley
  • 1 cup (100g) shredded cheddar cheese
  • 1 cup (80g) crushed Ritz crackers
  • 2 tbsp (30g) unsalted butter, melted

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease the baking dish.
  2. Sauté onion in olive oil until softened. Add garlic and cook until fragrant (about 30 seconds).
  3. Sprinkle flour over the onions and garlic. Cook for 1 minute, stirring constantly.
  4. Gradually whisk in milk and wine (or broth) until smooth.
  5. Stir in cream cheese until melted and smooth. Add Old Bay seasoning, pepper, and parsley.
  6. Gently fold in the thawed and drained seafood.
  7. Pour the seafood mixture into the prepared baking dish. Top with cheddar cheese.
  8. Combine crushed crackers and melted butter in a bowl.
  9. Sprinkle the cracker mixture evenly over the cheese.
  10. Bake for 30 minutes, or until golden brown and bubbly. Let stand for 5-10 minutes before serving.
