Ingredients:
- 1 cup Heavy Whipping Cream (cold)
- 1/4 cup Powdered Sugar (sifted)
- 1 teaspoon Vanilla Extract
- 2 tablespoons Butterscotch Syrup (for topping)
- 4 cups Cream Soda (very cold)
- 1/4 cup Butterscotch Syrup (for base)
- 1 tablespoon Salted Butter
- 1 tablespoon Brown Sugar (lightly packed)
Instructions:
- Chill the mixing bowl and whisk attachment for at least 15 minutes—this is key for good volume!
- In the chilled bowl, combine the heavy cream, sifted powdered sugar, vanilla extract, and 2 tablespoons of butterscotch syrup.
- Whip using the mixer on medium-high speed until soft to medium peaks form. Do not over-whip; set aside in the fridge.
- In the small saucepan over low heat, combine the 1/4 cup butterscotch syrup, tablespoon of butter, and brown sugar.
- Stir gently until the butter is melted and the sugar has dissolved fully. Remove from heat and allow to cool slightly (about 5 minutes).
- Divide the cooled syrup mixture evenly among four serving glasses (about 1.5 tablespoons per glass).
- Top each glass with approximately 1 cup (240ml) of very cold cream soda. Stir gently to mix the syrup into the soda.
- Spoon a generous dollop of the chilled cream topping onto the surface of each drink. Serve immediately.
