Ingredients:
- 2 tbsp unsalted butter
- 1 medium yellow onion, diced
- 2 medium carrots, diced
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp ground cinnamon
- 2 lbs sweet potatoes, peeled and cut into 1-inch cubes
- 4 cups vegetable broth
- 1 bay leaf
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup heavy cream
- 1 tbsp lemon juice
Instructions:
- Melt the butter over medium heat in a large Dutch oven or pot. Add the diced onion and carrots and cook for 5–7 minutes until translucent.
- Stir in the minced garlic, smoked paprika, and cinnamon. Stir constantly for 60 seconds until fragrant.
- Add the cubed sweet potatoes, broth, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce heat to low.
- Cover and simmer for 20–25 minutes, or until the sweet potatoes are fork-tender.
- Remove the bay leaf and use an immersion blender directly in the pot to blend the soup until completely smooth.
- Stir in the heavy cream and lemon juice. Heat through for 2 minutes on low heat without letting it reach a rolling boil.
