Ingredients:
- 2 tbsp (28g) unsalted butter
- 1 medium (110g) yellow onion, finely diced
- 3 cloves (9g) garlic, minced
- 1 tsp (2g) dried oregano
- 2 cans (15 oz / 425g each) cannellini beans, drained and rinsed
- 4 cups (950ml) vegetable broth
- 1 package (16 oz / 450g) potato gnocchi
- 2 cups (60g) fresh baby spinach
- 1/2 cup (120ml) heavy cream
- 1/2 cup (50g) freshly grated Parmesan cheese
- 1 tbsp (15ml) fresh lemon juice
- salt to taste
- black pepper to taste
Instructions:
- Place your pot over medium heat and melt the butter until it begins to foam.
- Add the diced onion and sauté for 4–5 minutes until translucent and soft.
- Stir in the minced garlic and dried oregano; cook for just 60 seconds until the fragrance is released.
- Pour in the vegetable broth and add the drained cannellini beans.
- Use the back of your wooden spoon to mash about 1/4 of the beans against the side of the pot to naturally thicken the soup.
- Bring the liquid to a gentle boil, then stir in the potato gnocchi.
- Reduce heat to a simmer and cook for 3–5 minutes until the gnocchi float to the surface and feel tender.
- Turn the heat down to low. Stir in the heavy cream and grated Parmesan cheese, stirring continuously until melted and silky.
- Fold in the baby spinach and stir for 1 minute until the leaves have wilted.
- Stir in the lemon juice and season with salt and black pepper to taste.
