Ingredients:

  • 1 pound cooked pork sausage or boudin
  • 1 cup cooked white rice
  • ½ cup finely chopped green onions
  • ½ cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup seasoned breadcrumbs
  • Vegetable oil for frying

Instructions:

  1. In a large mixing bowl, combine the cooked pork sausage, cooked rice, green onions, bell pepper, garlic, and Cajun seasoning. Mix until well combined.
  2. Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes to firm up.
  3. Scoop out about 2 tablespoons of the mixture and roll into balls, setting them on a baking sheet.
  4. Prepare three shallow bowls with flour, beaten eggs, and seasoned breadcrumbs.
  5. Dredge each ball in flour, dip in egg, and coat with breadcrumbs. Ensure an even coating for crispiness.
  6. In a frying pan or deep fryer, heat vegetable oil to 350°F (175°C).
  7. Carefully add the balls to the hot oil in batches, frying until golden brown (about 3-4 minutes).
  8. Remove from oil and drain on a wire rack or paper towels. Serve warm with your favorite dipping sauce.
