Ingredients:
- 1 pound cooked pork sausage or boudin
- 1 cup cooked white rice
- ½ cup finely chopped green onions
- ½ cup diced bell pepper
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup seasoned breadcrumbs
- Vegetable oil for frying
Instructions:
- In a large mixing bowl, combine the cooked pork sausage, cooked rice, green onions, bell pepper, garlic, and Cajun seasoning. Mix until well combined.
- Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes to firm up.
- Scoop out about 2 tablespoons of the mixture and roll into balls, setting them on a baking sheet.
- Prepare three shallow bowls with flour, beaten eggs, and seasoned breadcrumbs.
- Dredge each ball in flour, dip in egg, and coat with breadcrumbs. Ensure an even coating for crispiness.
- In a frying pan or deep fryer, heat vegetable oil to 350°F (175°C).
- Carefully add the balls to the hot oil in batches, frying until golden brown (about 3-4 minutes).
- Remove from oil and drain on a wire rack or paper towels. Serve warm with your favorite dipping sauce.
