Ingredients:
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1 cup all-purpose flour
- 1 large egg, beaten
- 1/2 cup grated Parmesan cheese
- 1-2 cloves garlic, minced
- 1/4 cup fresh dill or parsley, chopped
- 1/2 teaspoon black pepper
- Oil for frying
Instructions:
- Grate the zucchinis and place in a bowl. Sprinkle with salt and set aside for 10-15 minutes to draw out moisture.
- After resting, squeeze out excess moisture from the zucchini using a clean kitchen towel. In a mixing bowl, combine the squeezed zucchini, flour, egg, Parmesan, garlic, herbs, pepper, and mix well.
- Cover the bowl and refrigerate for 30 minutes to allow flavors to meld and the mixture to firm up.
- Heat oil in a frying pan over medium heat. Drop spoonfuls of the zucchini mixture into the hot oil, flatten slightly. Cook until golden brown, about 4-5 minutes per side.
- Use a slotted spoon to transfer to paper towels to drain excess oil. Serve warm with a dipping sauce or yogurt.
