Ingredients:

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 1 large egg, beaten
  • 1/2 cup grated Parmesan cheese
  • 1-2 cloves garlic, minced
  • 1/4 cup fresh dill or parsley, chopped
  • 1/2 teaspoon black pepper
  • Oil for frying

Instructions:

  1. Grate the zucchinis and place in a bowl. Sprinkle with salt and set aside for 10-15 minutes to draw out moisture.
  2. After resting, squeeze out excess moisture from the zucchini using a clean kitchen towel. In a mixing bowl, combine the squeezed zucchini, flour, egg, Parmesan, garlic, herbs, pepper, and mix well.
  3. Cover the bowl and refrigerate for 30 minutes to allow flavors to meld and the mixture to firm up.
  4. Heat oil in a frying pan over medium heat. Drop spoonfuls of the zucchini mixture into the hot oil, flatten slightly. Cook until golden brown, about 4-5 minutes per side.
  5. Use a slotted spoon to transfer to paper towels to drain excess oil. Serve warm with a dipping sauce or yogurt.
