Ingredients:
- 1 cup (120g) all-purpose flour
- 1/2 cup (60g) confectioners' sugar
- 1/4 teaspoon salt
- 1/2 cup (113g) unsalted butter, softened
- 2 large egg whites
- 1 teaspoon vanilla extract
- 1 cup (170g) semi-sweet chocolate chips or dark chocolate, chopped
- 1 tablespoon (15g) coconut oil or vegetable shortening (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, confectioners' sugar, and salt. In another bowl, cream together softened butter until smooth. Add egg whites and vanilla extract; mix until combined. Gradually incorporate the dry ingredients until just combined.
- Using a piping bag fitted with a round tip, pipe thin lines about 4 inches long onto the prepared baking sheet, leaving space between each.
- Bake for 5-7 minutes or until edges are golden brown. Watch closely!
- While still warm, quickly remove cookies from the baking sheet and roll each cookie around a stick to form a tube shape, holding for a few seconds until set.
- In a double boiler or microwave, melt the chocolate, adding coconut oil if desired, until smooth.
- Dip each cookie end in melted chocolate and place on parchment to cool.
