Ingredients:

  • 3 large firm apples (approx. 450g), such as Honeycrisp or Fuji
  • 1.5 teaspoons ground cinnamon (approx. 4g)
  • 1 pinch sea salt (optional)

Instructions:

  1. Position oven racks in the upper and lower thirds of your oven. Preheat oven to 200°F (95°C). Line two large baking sheets with parchment paper or silicone mats.
  2. Using a mandoline slicer set to 1/16-inch or a very sharp chef's knife, slice the apples into paper-thin rounds. Remove any stray seeds, but the core can remain for a star pattern.
  3. Arrange the apple slices on the prepared baking sheets in a single layer. Ensure slices do not overlap, though they may touch slightly as they will shrink during baking.
  4. Load a small sifter with ground cinnamon and lightly dust the tops of the apple slices from a height to ensure an even coating.
  5. Place sheets in the oven and bake for 1 hour. Remove from oven, flip each slice, and rotate the baking sheets between the upper and lower racks.
  6. Bake for another 1 to 1.5 hours. The chips are ready when the edges are curled and they feel dry to the touch, though they may remain slightly flexible until cooled.
  7. Remove from the oven and let the chips sit on the baking sheet for 10-15 minutes. This cooling phase is essential for the chips to fully crisp up.
