Ingredients:
- 2 Flounder fillets (approx. 6 oz/170g each), skinless
- 1 tbsp Olive oil (15ml)
- 1 tbsp Lemon juice, freshly squeezed (15ml)
- Salt and freshly ground black pepper, to taste
- 1/2 cup Panko breadcrumbs (50g)
- 2 tbsp Fresh parsley, finely chopped (30ml)
- 1 tbsp Fresh thyme, finely chopped (15ml)
- 1 tbsp Lemon zest, grated from 1 lemon (15ml)
- 2 tbsp Parmesan cheese, grated (15g)
- 2 tbsp Unsalted butter, melted (30g)
- 1/4 tsp Garlic powder (1.25ml)
Instructions:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper (if using).
- Pat the flounder fillets dry with paper towels. Place them on the prepared baking sheet. Drizzle with olive oil and lemon juice. Season with salt and pepper.
- In a small mixing bowl, combine the panko breadcrumbs, parsley, thyme, lemon zest, parmesan cheese, melted butter, and garlic powder. Mix well.
- Evenly distribute the breadcrumb mixture over the flounder fillets, gently pressing down to help it adhere.
- Bake in the preheated oven for 15-20 minutes, or until the flounder is cooked through and the breadcrumb coating is golden brown and crispy. (Fish should flake easily with a fork, and reach an internal temperature of 145°F/63°C).
- Serve immediately with your favorite sides.
