Ingredients:

  • 2 Flounder fillets (approx. 6 oz/170g each), skinless
  • 1 tbsp Olive oil (15ml)
  • 1 tbsp Lemon juice, freshly squeezed (15ml)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup Panko breadcrumbs (50g)
  • 2 tbsp Fresh parsley, finely chopped (30ml)
  • 1 tbsp Fresh thyme, finely chopped (15ml)
  • 1 tbsp Lemon zest, grated from 1 lemon (15ml)
  • 2 tbsp Parmesan cheese, grated (15g)
  • 2 tbsp Unsalted butter, melted (30g)
  • 1/4 tsp Garlic powder (1.25ml)

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper (if using).
  2. Pat the flounder fillets dry with paper towels. Place them on the prepared baking sheet. Drizzle with olive oil and lemon juice. Season with salt and pepper.
  3. In a small mixing bowl, combine the panko breadcrumbs, parsley, thyme, lemon zest, parmesan cheese, melted butter, and garlic powder. Mix well.
  4. Evenly distribute the breadcrumb mixture over the flounder fillets, gently pressing down to help it adhere.
  5. Bake in the preheated oven for 15-20 minutes, or until the flounder is cooked through and the breadcrumb coating is golden brown and crispy. (Fish should flake easily with a fork, and reach an internal temperature of 145°F/63°C).
  6. Serve immediately with your favorite sides.
