Ingredients:

  • 450g (1 lb) skinless salmon fillet, cut into 2.5cm (1 inch) cubes
  • 50g (1/2 cup) all-purpose flour
  • 1 large egg, beaten
  • 50g (1/2 cup) grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 120g (1/2 cup) Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • Pinch of garlic powder (optional)

Instructions:

  1. Pat the salmon cubes dry with paper towels and season with salt and pepper.
  2. Place flour in one shallow dish, beaten egg in the second, and grated Parmesan in the third.
  3. Dredge each salmon cube in flour, then dip in the egg, and finally coat thoroughly with Parmesan.
  4. Heat olive oil in a large skillet over medium heat. Add the Parmesan-crusted salmon bites in a single layer. Cook for 2-3 minutes per side, or until golden brown and cooked through (internal temperature reaches 145°F/63°C).
  5. While the salmon is cooking, whisk together Greek yogurt, mayonnaise, dill, lemon juice, lemon zest (if using), garlic powder (if using), salt, and pepper in a small bowl.
