Ingredients:
- 450g (1 lb) skinless salmon fillet, cut into 2.5cm (1 inch) cubes
- 50g (1/2 cup) all-purpose flour
- 1 large egg, beaten
- 50g (1/2 cup) grated Parmesan cheese
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- 120g (1/2 cup) Greek yogurt
- 2 tbsp mayonnaise
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- 1 tsp lemon zest
- Pinch of garlic powder (optional)
Instructions:
- Pat the salmon cubes dry with paper towels and season with salt and pepper.
- Place flour in one shallow dish, beaten egg in the second, and grated Parmesan in the third.
- Dredge each salmon cube in flour, then dip in the egg, and finally coat thoroughly with Parmesan.
- Heat olive oil in a large skillet over medium heat. Add the Parmesan-crusted salmon bites in a single layer. Cook for 2-3 minutes per side, or until golden brown and cooked through (internal temperature reaches 145°F/63°C).
- While the salmon is cooking, whisk together Greek yogurt, mayonnaise, dill, lemon juice, lemon zest (if using), garlic powder (if using), salt, and pepper in a small bowl.
