Ingredients:
- 450g (1 lb) skinless salmon fillet, cut into 1-inch cubes
- 60g (1/2 cup) all-purpose flour, plus extra for dusting
- 120ml (1/2 cup) ice-cold sparkling water
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil, for frying (about 4 cups)
- 120ml (1/2 cup) mayonnaise
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh dill
- 1 clove garlic, minced
- 1/4 teaspoon salt
- Pinch of black pepper
Instructions:
- Pat the salmon cubes dry with paper towels. Lightly dust with flour.
- In a large bowl, whisk together flour, baking powder, salt, and pepper. Gradually whisk in ice-cold sparkling water until just combined.
- Heat vegetable oil in a deep pot or Dutch oven to 350°F (175°C).
- Dip each salmon cube into the batter, ensuring it's fully coated. Carefully drop the battered salmon into the hot oil, working in batches.
- Fry for 2-3 minutes per side, until golden brown and the salmon is cooked through.
- Remove the salmon bites with a slotted spoon and transfer to a plate lined with paper towels to drain excess oil.
- While the salmon is frying, whisk together all aioli ingredients in a small bowl.
- Serve the Crispy Salmon Bites hot with the Lemon-Dill Aioli. Garnish with extra fresh dill and lemon wedges, if desired.
