Ingredients:

  • 450g (1 lb) skinless salmon fillet, cut into 1-inch cubes
  • 60g (1/2 cup) all-purpose flour, plus extra for dusting
  • 120ml (1/2 cup) ice-cold sparkling water
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying (about 4 cups)
  • 120ml (1/2 cup) mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • Pinch of black pepper

Instructions:

  1. Pat the salmon cubes dry with paper towels. Lightly dust with flour.
  2. In a large bowl, whisk together flour, baking powder, salt, and pepper. Gradually whisk in ice-cold sparkling water until just combined.
  3. Heat vegetable oil in a deep pot or Dutch oven to 350°F (175°C).
  4. Dip each salmon cube into the batter, ensuring it's fully coated. Carefully drop the battered salmon into the hot oil, working in batches.
  5. Fry for 2-3 minutes per side, until golden brown and the salmon is cooked through.
  6. Remove the salmon bites with a slotted spoon and transfer to a plate lined with paper towels to drain excess oil.
  7. While the salmon is frying, whisk together all aioli ingredients in a small bowl.
  8. Serve the Crispy Salmon Bites hot with the Lemon-Dill Aioli. Garnish with extra fresh dill and lemon wedges, if desired.
