Ingredients:

  • 3 large green plantains (about 600g)
  • 1 cup vegetable oil (240ml), for frying
  • Sea salt, to taste
  • ½ cup mayonnaise (120ml), for optional dipping sauce
  • 1 clove garlic, minced (or ½ teaspoon garlic powder)
  • 1 tablespoon lime juice (15ml)
  • Pinch of cayenne pepper (optional)

Instructions:

  1. Peel the plantains and cut them into 1-inch thick slices.
  2. Heat the vegetable oil in a large frying pan over medium-high heat.
  3. Carefully add the plantain slices to the hot oil; fry until golden and soft (about 3-4 minutes each side).
  4. Use a slotted spoon to remove the slices, draining on paper towels.
  5. Using a flat surface, gently press down on each slice until about ½-inch thick.
  6. Return the flattened plantains to the hot oil and fry until crisp and golden brown (about 2-3 minutes each side).
  7. Remove from the oil, drain on paper towels again, and sprinkle with sea salt while hot.
  8. Enjoy warm with dipping sauce or your choice of toppings.
