Ingredients:
- 3 large green plantains (about 600g)
- 1 cup vegetable oil (240ml), for frying
- Sea salt, to taste
- ½ cup mayonnaise (120ml), for optional dipping sauce
- 1 clove garlic, minced (or ½ teaspoon garlic powder)
- 1 tablespoon lime juice (15ml)
- Pinch of cayenne pepper (optional)
Instructions:
- Peel the plantains and cut them into 1-inch thick slices.
- Heat the vegetable oil in a large frying pan over medium-high heat.
- Carefully add the plantain slices to the hot oil; fry until golden and soft (about 3-4 minutes each side).
- Use a slotted spoon to remove the slices, draining on paper towels.
- Using a flat surface, gently press down on each slice until about ½-inch thick.
- Return the flattened plantains to the hot oil and fry until crisp and golden brown (about 2-3 minutes each side).
- Remove from the oil, drain on paper towels again, and sprinkle with sea salt while hot.
- Enjoy warm with dipping sauce or your choice of toppings.
