Ingredients:

  • 1 large yucca root (about 1.5 lbs or 680g)
  • 4 cups water (950ml) for soaking
  • 1 tsp sea salt (5g)
  • Oil for frying (vegetable, canola, or peanut oil)
  • ½ cup mayonnaise (120ml)
  • 1 tbsp lime juice (15ml)
  • 1 tsp lime zest (5g)
  • ½ tsp garlic powder (2g)
  • ½ tsp salt (2g)
  • ¼ tsp black pepper (1g)

Instructions:

  1. Cut off the ends of the yucca root.
  2. Peel the tough outer skin (consider using a vegetable peeler or knife).
  3. Cut the white flesh into fries (about ½ inch wide).
  4. Place the cut yucca fries in a large bowl, cover with water, and add salt.
  5. Allow to soak for at least 30 minutes to remove excess starch.
  6. Boil the soaked yucca fries in a pot of salted water until just tender, about 10-15 minutes.
  7. Drain the fries and let them cool slightly.
  8. In a mixing bowl, combine mayonnaise, lime juice, lime zest, garlic powder, salt, and black pepper.
  9. Mix until well combined; set aside.
  10. Heat oil in a deep pot to about 350°F (175°C).
  11. Fry the pre-cooked yucca fries in batches until golden brown and crispy, about 5-7 minutes per batch.
  12. Remove with a slotted spoon and drain on paper towels.
  13. Transfer fries to a serving platter and serve immediately with the zesty lime dipping sauce.
