Ingredients:
- 1 large yucca root (about 1.5 lbs or 680g)
- 4 cups water (950ml) for soaking
- 1 tsp sea salt (5g)
- Oil for frying (vegetable, canola, or peanut oil)
- ½ cup mayonnaise (120ml)
- 1 tbsp lime juice (15ml)
- 1 tsp lime zest (5g)
- ½ tsp garlic powder (2g)
- ½ tsp salt (2g)
- ¼ tsp black pepper (1g)
Instructions:
- Cut off the ends of the yucca root.
- Peel the tough outer skin (consider using a vegetable peeler or knife).
- Cut the white flesh into fries (about ½ inch wide).
- Place the cut yucca fries in a large bowl, cover with water, and add salt.
- Allow to soak for at least 30 minutes to remove excess starch.
- Boil the soaked yucca fries in a pot of salted water until just tender, about 10-15 minutes.
- Drain the fries and let them cool slightly.
- In a mixing bowl, combine mayonnaise, lime juice, lime zest, garlic powder, salt, and black pepper.
- Mix until well combined; set aside.
- Heat oil in a deep pot to about 350°F (175°C).
- Fry the pre-cooked yucca fries in batches until golden brown and crispy, about 5-7 minutes per batch.
- Remove with a slotted spoon and drain on paper towels.
- Transfer fries to a serving platter and serve immediately with the zesty lime dipping sauce.
