Ingredients:

  • 1 English cucumber (approx. 300g), peeled in stripes (optional), and cut into 1-inch thick rounds
  • 1 pint cherry tomatoes (approx. 250g), halved
  • 8 oz fresh mozzarella balls (bocconcini), (approx. 225g), drained well
  • ¼ cup fresh basil leaves, (approx. 15g), small leaves left whole, larger leaves torn
  • 2 tablespoons extra virgin olive oil (30ml)
  • 1 tablespoon balsamic glaze (15ml)
  • Salt and freshly ground black pepper to taste
  • Small wooden skewers (Optional)

Instructions:

  1. Cut the cucumber into approximately 1-inch thick rounds. Lightly salt them and let sit for 10 minutes to draw out excess moisture. Pat dry with paper towels.
  2. Thread cucumber, mozzarella ball, cherry tomato half, and basil leaf onto each skewer, alternating ingredients. Or, arrange individual ingredients on the plate.
  3. Drizzle the skewers or salad with extra virgin olive oil.
  4. Season generously with salt and freshly ground black pepper to taste.
  5. Drizzle with balsamic glaze just before serving.
