Ingredients:
- 2 oz (60ml) Gin (London Dry or something a bit floral)
- ½ medium Cucumber, peeled and roughly chopped
- 1 oz (30ml) Fresh Lime Juice
- ¾ oz (22ml) Simple Syrup (1:1 sugar and water ratio)
- 3-4 oz (90-120ml) Soda Water, chilled
- Ice cubes
- Cucumber ribbons, for garnish
- Lime wedge, for garnish
Instructions:
- In a cocktail shaker, gently muddle the cucumber until fragrant and slightly broken down.
- Add the gin, lime juice, and simple syrup to the shaker.
- Fill the shaker with ice. Close tightly and shake well for 15-20 seconds until well-chilled.
- Strain the mixture into a highball glass filled with ice.
- Top with soda water.
- Garnish with cucumber ribbons and a lime wedge.
