Ingredients:

  • 2 oz (60ml) Gin (London Dry or something a bit floral)
  • ½ medium Cucumber, peeled and roughly chopped
  • 1 oz (30ml) Fresh Lime Juice
  • ¾ oz (22ml) Simple Syrup (1:1 sugar and water ratio)
  • 3-4 oz (90-120ml) Soda Water, chilled
  • Ice cubes
  • Cucumber ribbons, for garnish
  • Lime wedge, for garnish

Instructions:

  1. In a cocktail shaker, gently muddle the cucumber until fragrant and slightly broken down.
  2. Add the gin, lime juice, and simple syrup to the shaker.
  3. Fill the shaker with ice. Close tightly and shake well for 15-20 seconds until well-chilled.
  4. Strain the mixture into a highball glass filled with ice.
  5. Top with soda water.
  6. Garnish with cucumber ribbons and a lime wedge.
