Ingredients:
- 8 cups chilled filtered water
- 1 large English cucumber (300g), thinly sliced
- 0.5 cup fresh mint leaves (10g)
- 0.5 lemon, sliced into rounds (optional)
Instructions:
- Wash the cucumber thoroughly. Using a mandoline or sharp knife, slice the cucumber into very thin rounds or long ribbons to maximize surface area for extraction.
- Place fresh mint leaves in the palm of one hand and 'clap' your hands together to bruise the leaves and release essential menthol oils.
- Layer the cucumber slices, bruised mint, and optional lemon rounds in the bottom of a large 2-quart glass pitcher.
- Pour 8 cups of filtered water over the ingredients and stir gently with a long spoon to agitate the infusion.
- Place the pitcher in the refrigerator and allow to steep for at least 1 hour before serving to achieve full flavor profile.
