Ingredients:

  • 8 cups chilled filtered water
  • 1 large English cucumber (300g), thinly sliced
  • 0.5 cup fresh mint leaves (10g)
  • 0.5 lemon, sliced into rounds (optional)

Instructions:

  1. Wash the cucumber thoroughly. Using a mandoline or sharp knife, slice the cucumber into very thin rounds or long ribbons to maximize surface area for extraction.
  2. Place fresh mint leaves in the palm of one hand and 'clap' your hands together to bruise the leaves and release essential menthol oils.
  3. Layer the cucumber slices, bruised mint, and optional lemon rounds in the bottom of a large 2-quart glass pitcher.
  4. Pour 8 cups of filtered water over the ingredients and stir gently with a long spoon to agitate the infusion.
  5. Place the pitcher in the refrigerator and allow to steep for at least 1 hour before serving to achieve full flavor profile.
