Ingredients:
- 2 cups mixed berries (such as strawberries, blueberries, and raspberries; fresh or frozen)
- 1/4 cup (50g) granulated sugar
- Zest of 1 medium lemon
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon cornstarch
- 1 cup (130g) all-purpose flour
- 1/2 cup (100g) rolled oats
- 1/2 cup (100g) brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (115g) unsalted butter, melted
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine mixed berries, sugar, lemon zest, lemon juice, and cornstarch.
- Gently toss to coat the berries and let sit while preparing the crumble topping.
- In another bowl, whisk together flour, oats, brown sugar, baking powder, and salt.
- Pour in melted butter and stir until the mixture resembles coarse crumbs.
- Spread the berry mixture evenly in the bottom of the baking dish.
- Sprinkle the crumble topping over the berry mixture.
- Bake for 30–35 minutes until the top is golden brown and the berry filling is bubbling.
- Cool for at least 10 minutes before serving.
