Ingredients:

  • 2 cups mixed berries (such as strawberries, blueberries, and raspberries; fresh or frozen)
  • 1/4 cup (50g) granulated sugar
  • Zest of 1 medium lemon
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon cornstarch
  • 1 cup (130g) all-purpose flour
  • 1/2 cup (100g) rolled oats
  • 1/2 cup (100g) brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine mixed berries, sugar, lemon zest, lemon juice, and cornstarch.
  3. Gently toss to coat the berries and let sit while preparing the crumble topping.
  4. In another bowl, whisk together flour, oats, brown sugar, baking powder, and salt.
  5. Pour in melted butter and stir until the mixture resembles coarse crumbs.
  6. Spread the berry mixture evenly in the bottom of the baking dish.
  7. Sprinkle the crumble topping over the berry mixture.
  8. Bake for 30–35 minutes until the top is golden brown and the berry filling is bubbling.
  9. Cool for at least 10 minutes before serving.
