Ingredients:
- 8 slices of thick-cut bread (e.g., brioche, Texas toast)
- 1 cup whole milk
- 1/2 cup pumpkin puree
- 3 large eggs
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- A pinch of salt
- 2 tablespoons unsalted butter
- Maple syrup (optional)
- Whipped cream (optional)
- Powdered sugar for dusting (optional)
Instructions:
- In a mixing bowl, whisk together the milk, pumpkin puree, eggs, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
- Pour the custard mixture into a shallow dish. Submerge each slice of bread in the mixture, allowing it to soak for about 5 minutes on each side.
- Heat a griddle or non-stick skillet over medium heat and add 1 tablespoon of butter.
- Working in batches, place soaked bread slices on the griddle. Cook for 3-4 minutes on each side, until golden brown and cooked through.
- Repeat the cooking process with remaining bread, adding more butter as needed. Serve immediately with optional toppings like maple syrup, whipped cream, or powdered sugar.
