Ingredients:

  • 8 slices of thick-cut bread (e.g., brioche, Texas toast)
  • 1 cup whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • A pinch of salt
  • 2 tablespoons unsalted butter
  • Maple syrup (optional)
  • Whipped cream (optional)
  • Powdered sugar for dusting (optional)

Instructions:

  1. In a mixing bowl, whisk together the milk, pumpkin puree, eggs, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
  2. Pour the custard mixture into a shallow dish. Submerge each slice of bread in the mixture, allowing it to soak for about 5 minutes on each side.
  3. Heat a griddle or non-stick skillet over medium heat and add 1 tablespoon of butter.
  4. Working in batches, place soaked bread slices on the griddle. Cook for 3-4 minutes on each side, until golden brown and cooked through.
  5. Repeat the cooking process with remaining bread, adding more butter as needed. Serve immediately with optional toppings like maple syrup, whipped cream, or powdered sugar.
